I absolutely love Cajun food as well. My favorites definitely have to be Crawfish Etouffee and gumbo...the hotter the better...so good with hot tobasco sauce ! I'm a little curious...Does your coubouillon recipe not include any sort of Cajun spices? Some of the coubouillon recipe I've seen also includes Cajun spices like cayenne pepper as well. I guess you can always splash some dashes of Tobasco for added spicy flavor
PS - I believe the pronunciation for "coubouillon" is "coo-bee-yon", the Cajun pronunciation for `court bouillon,' or `little soup'. Living in TX for so long, I often time say the Cajun words incorrectly too. I guess I annoy my Cajun colleagues enough with my mispronunciation of their Cajun vocabularies (practically French with a weird southern drawl) that they finally starting to correct me
