ก่อนที่จะมาเป็นอาหารอร่อยสิ่งสำคัญที่สุด ก็คือความสดใหม่ของวัตถุดิบ โดยเฉพาะอย่างยิ่งอาหารทะเลแล้วหากไม่สดจะปรุงอาหารอย่างไรก็ไม่อร่อย วันนี้ผมเลยมีความรู้ดีๆ เกี่ยวกับการเลือกปลาหมึกมาฝากกัน


การเลือกปลาหมึกสดนั้น ปลาหมึกจะต้องแข็ง หนวดแข็ง ตาสดใส เยื่อหุ้มจะต้องไม่ฉีกขาด และน้ำหมึกต้องไม่ไหลออกมา อีกอย่างหนึ่งที่ควรสัง เกตุก็คือ เยื่อหุ้มปลาหมีกสดจะลอกออกได้ง่าย แต่ในกรณีที่ไม่มีเยื่อหุ้มแล้ว ให้ลองจับตัวปลาหมึกจะต้องไม่นิ่ม หากนิ่ม ฟันธงเลยว่าไม่สด
