Dough: 1/2 cup (3 1/4 ounces) vegetable shortening (margarine) 1/2 cup unsalted butter 1 1/2 cups sugar 1 teaspoon vanilla extract 2 teaspoons baking powder 2 large eggs 3/4 teaspoon salt 2 3/4 cups unbleached all-purpose flour
Coating: 1/2 cup sugar 2 teaspoons cinnamon
- Preheat oven to 400'F. Lightly grease (or line with parchment) two baking sheets. - To make the dough: in a medium-sized bowl, cream together the shortening, butter, sugar, vanilla, and baking powder, beating until smooth. Add eggs, again beating until smooth, stopping to scrape bowl once. Add the flour, mixing slowly until combined. - To make the coating: mix the sugar and cinnamon together in a shallow bowl (or in a large plastic bag). - Using a cookie scoop or your fingers, dip out 1 level tablespoon of dough and roll it into a ball. Place the ball in the bowl or bag of cinnamon sugar. When you've got five or six dough balls in the sugar, gently shake them until they're completely coated. Place them on the prepared baking sheets, about 1 1/2 inches apart. Using the bottom of a glass, flatten each cooking to about 1/2 inch thick. Repeat with the remaining dough. - Bake for 8 minutes, or until they're golden brown around the edges. Remove from the oven and transfer to a rack to cool.
This is very easy to make if you can easily find ingredients in Thailand. Don't throw away the leftover cinnamon sugar after making cookies, it is really yummy on the buttered toast for breakfast.
