250g (8oz) butter, softened250g (8oz) light soft brown sugar or light muscavado sugar4 large eggs300g (10oz) plain flour1 level table spoon ground mixed spice250g packet dried apricots, chopped2x170g packets dried cranberries500g (1lb) sultanas6 tablespoons brandy20cm (8inch) round or18cm (7inch) square cake tin, line with baking parchment Cream together the butter and sugar until the mixture is light and fluffy.Add the eggs, one at a time, adding a little flour along with each egg and beat the mixture well before adding the next egg.Add the remaining flour and the mixed spice to the bowl and beat well.Tip the chopped apricots, cranberries and sultanas into the bowl and fold the ingredients together.Spoon the mixture into the lined tin, and level the surface.Smooth over the surface with a wet hand.Place the cake in the center of the oven for 1-1 1/2 hours at 150c, over a tray of water to keep it from drying out.Insert a skewer to check the cake is ready.Remove cake from oven, leave it to cool for about 15 minutes, then spoon over the brandy.
