Dark Cherry Chews
I came accross the recipe from gourmet.com which is originally called ' Apricot Chews ' ...for some reason, I decided to give it a try even I didn't have dried apricot in stock ! I ,therefore, had to use something as a sustitute and it turned out to be a canned dark sweet cherry, a leftover from my black forest cake!! Consequently, it gave me no choice but modified the recipe..
And to be honest, given the fact above, I didn't really expect to see or have a successful outcome out of the oven, I then didn't bother to take any photo through the preparation... Anyway, I managed to take some photos at the end after seeing and tasting the result cuz I think it's far too good to be ignored !!
Here is the modified recipe..
1. Melt 3/4 cup butter, add 3/4 cup brown sugar, 1 1/2 cups each of flour and rolled oat ( old-fashioned one) , 1/4 tsp salt, 1 tsp baking soda and 1 tsp vanilla. Mix the ingredients thoroughly and press half the mixture into an 8 inches square greased baking pan.
2. Drain one can of dark sweet cherry from the syrup and add 1 tablespoon kirsch ( cherry brandy) ,then mash. Spoon the cherry over the crumb mixture in the baking pan and cover them with the rest of the crumbs. Bake the mixture in a moderate oven (350° F.) for 22 to 25 minutes, or until it is golden. Cut the mixture into squares while it is still warm and turn out the chews from the pan when they are cold and set.
