Adapted from Great Grains Muffin by Dorie Greenspan
2/3 C all purpose flour 1/4 C yellow cornmeal 1/4 C old-fashioned oats 2 Tbsp sugar 1 tsp baking powder 1/8 tsp baking soda 1/8 tsp salt 1/2 C buttermilk 2.5 tbsp golden syrup 1/2 tsp vanilla extract 1 large eggs 57g butter, melted 1/2 cup dried pitted prune,chopped
Preheat the oven to 400° and line the cups with 6 paper muffin cups.
Combine the flour, cornmeal, oats, baking powder, baking soda, and salt in a large bowl. Stir to combine. In another bowl combine the buttermilk, syrup, vanilla, sugar, eggs, and butter. Whisk to combine. Add the prune to the dry mixture. Fold the wet mixture into the dry mixture making sure to only stir enough to combine dont over-stir. Divide the batter evenly among the muffin cups and bake for 18 to 20 minutes or until the tops are golden and a thin knife inserted into a muffin comes out clean. Transfer the pan to a cooling rack and let it rest for 5 minutes. Gently remove the muffins and allow them to cool
