Tuna fishcakes
There are only 4 main ingredients and I would say it couldn't be easier to make !!
Ingredients (Makes 4):
250g potatoes 185g canned tuna in oil 1 tbsp chopped parsley 2 spring onion ,chopped squeeze of lemon juice salt and pepper ,to season plain flour ,to dust oil for frying
Method:
1. Boil the potatoes for 20 minutes and drain. Then mash and set aside.
2. Flake the drained tuna into the mashed potatoes to mix and add the greens and lemon juice. Divide into 4 fishcake and dust with the plain flour.
3. Heat the oil on a medium heat ,when the edge starts to bubble ,add the fishcakes and fry for 5 mins each side until brown and crispy.
