Ingredients 2 cups sugar ½ cup water tblsp. corn syrup 4 squares (4 oz.) chocolate, melted 2 ½ cups grated coconut 2 tsp. vanilla 1 tblsp. butter
Directions Butter an 8 pan. Combine the sugar, water, corn syrup and chocolate in a saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn heat down and cook, stirring frequently, until it becomes soft enough to mold into a ball (236°). Cool to lukewarm. Stir in coconut. Add vanilla and butter and beat until thick and creamy. Pour into pan. When cold, cut into squares. Makes about 1 ½ pounds.
