2 (8oz.) pkgs. softened cream cheese 3/4 cup sugar 2 eggs 1 tbs. lemon juice 1 tsp. vanilla Vanilla wafers cherry pie filling, fruit topping or preserves
Preparation:
Beat together cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Line muffin tins with cupcake papers. Place a vanilla wafer in bottom of each. Fill about 2/3 full with cheese mixture. Bake @ 350 for 20-25 minutes or until just set. Let cool in pans, then remove and top with cherry pie filling or filling of your choice. I make lemon topping or sometimes use various preserves. Chill and serve. This makes 12-14 depending on the size of your muffin tins.
