Tiger Bread
Tiger bread is made with sesame oil and with a pattern baked into the top made by painting rice paste onto the surface prior to baking. It is sold as "Dutch crunch" in delis throughout the San Francisco Bay Area, but is little known in the United States outside that region. In the United States it is also sometimes known as dragonette bread.
And I made this bread just for the love of Tiger Woods !!
Btw, the outstanding thing about this bread is a pasted topping which creates a two-colour effect similar to a tiger; hence the name...
The rice paste topping :
3/4 cup rice flour 1 tbsp sugar 1 tbsp sesame oil 1 tbsp active dried yeast 1/4 salt 1/2 cup warm water
Mix all ingredients in a bowl and let it rise for 15-20 minutes, then coat the top and sides of the dough after the second rise with the rice paste and bake in the pre-heated oven ( 375 F) for 25-30 minutes..
