Banana Sour Cream Bread
Having been making different kinds of bread for quite a while, I now seem confident and relaxed enough to play around with ingredients for simply making my own version ( with a guideline though...)
And the outcome was nothing less than what I expected..on the contrary, it's actually beyond my expectation!!
Ingredients :
300g strong white flour 1/4 tsp salt 3 tbsp full cream milk powder 1+1/4 tsp active dry yeast 1/4 cup lukewarm water 1 tsp sugar 3 tbsp clear honey 1 ripe banana 3 tbsp sour cream 40 g butter, at room temperature 1 egg+ 1 tbsp milk for egg wash
Method:
1. Mix the yeast with the water and sugar in a small bowl and leave until foamy.
2. Meanwhile, in another bowl, mash the banana the add the sour cream and honey and stir to blend. Then whisk the flour, salt and the milk powder together in a large mixing bowl and set aside. When the yeast mixture is ready, then pour it into the flour mixture together with the banana mixture.
3. Using a dough hook at minimum speed, mix everything except the butter to form a ball. Then add the butter and mix to incorperate, then knead the dough with low-medium speed for about 10 minutes until smooth and elastic. Turn out onto a work surface and knead the dough a few more minutes by hands ( at this point, I happened to have an idea to jazz the dough up somehow, so I ended up adding some cinnamon and ground nutmeg for the purpose and knead until incorperated !). Place the dough in an oiled bowl and cover with plastic wrap. Allow to rise 1 to 1 ½ hours until almost doubled in bulk.
4. Deflate the dough by punching down with your fist for several times, then divide and shape it into 6 balls. Place the balls into the lightly greased round cake tin and cover with an oily cling film and let it rise again for 1 hour.
5. Preheat the oven to 180ºC/350ºF; brush the top with egg wash and bake the bread for 20-25 minutes, until golden. If it seems to be getting too brown toward the end of cooking, you can cover with foil. Remove from oven and transfer the pan to wire rack for about 10 minutes before turning the bread out to cool completely.

ปกติบัวไม่ค่อยชอบกิน
แต่มาม่อนของคุณก้อยดูนุ่มฉ่ำน่ากินที่สุดตั้งแต่บัวเคยเห็นมาเลยค่ะ ส่วนใหญ่จะดูฟูนิ่ม แต่แห้งๆ
