Rosca de Reyes


The Rosca de Reyes, "kings ring" is a crown-shaped sweet bread decorated with pieces of candied orange and lime resembling the jewels of a crown. It is often filled with nuts, figs, and cherries. Into this bread is baked a small plastic doll symbolizing a secure place away from Herod´s army where the infant child could be born. As each piece is cut with a knife, symbolizing the danger in which the Baby Jesus was in, everyone carefully checks their slice, hopping they didn't get the figurine as they will need to host, Candelaria or Candle mass day.


I made this bread regardless of anything it involved... just because it's a bread and it looked good to me, so there isn't a doll, bean or anything else hidden in the bread. And I kind of mixed 2 recipes (here and here) to make my version...


The most difficult part for me is to knead the dough ( by hand ) but that's probably because I did it after we finished the second bottle of wine (I think I handle with it better without alcohol in my blood!).. I didn't knead it as long as I normally do either..yet it came out terrific !


Btw, shooting photos of the bread is surprisingly difficult...it's not that I couldn't find good angles but my gal kept picking up the bread (as seen on the photos) , which really forced me to sweat blood !!


Here is my version..


For the coffee-infused fruit:

¼ cup sultanas
¼ cup mixed peel
½ cup espresso

Fro the dough:

2 teaspoons active dry yeast
1/2 cup milk
1/3 cup plus 1 tbsp caster sugar
the zest of 1 orange plus extra of lemon
3/4 teaspoon salt
2-1/4 cups bread flour
75 g unsalted butter, melted
2 large eggs
1/4 cup ground almond


For the decoration:

1 egg beaten with 1 tablespoon of water
glace cherries
Candied orange and lemon peel
Sliced almond


Method :


1. Prepare the coffee-infused fruit: Place the sultanas and the mixed peela in a jar and add the coffee. Close with lid and allow to soak overnight in the refrigerator.


2. Make thoe dough : Warm the milk in microwave or on the stovetop (make sure the temperature doesn’t go above 105 degrees F) and dissolve yeast and 1 teaspoon of sugar in it. Proof for 10 minutes. Meanwhile, combine all dry ingredients in mixer bowl and all wet ingredients in another bowl. With machine turned on, add yeast mixture to flour-mixture, then add the wet ingredients and knead for 8 minutes. Remove dough from machine and hand-knead 5 minutes. Return to lightly greased bowl and cover lightly with plastic wrap or towel. Leave to rise overnight in the fridge.


3. Next day, take the fruits and the dough out of the fridge, drain the fruits..and turn the dough onto a lightly-oiled surface, flatten it and add the almond and coffee-soaked fruits into the dough and knead until it becomes firm and elastic again ( I added a bit of flour at this stage).


4. Use your hands make a cylinder of approximately 20 inches in length. Form the dough into a circle and pinch the two ends together with your fingers. Transfer it to the baking sheet lined with a parchment paper, cover with plastic wrap and let rest in a warm place about 45-60 minutes.


5. Preheat the oven to 190C˚ approximately 5-10 minutes before the dough is finished rising. When the bread is ready to go in the oven, brush the surface with the egg-water glaze and decorate with the cherries, candied orange and lemon peels and sliced almond.


6. Bake for 22-25 minutes. Remove from the oven and let cool on a wire rack until cool.

น่าทานจริงๆ คะ ไอเดียดีเนอะที่เอาถ้วยวางไว้ตรงกลางของแป้ง ไว้ทำบ้างนะ บ้านนี้ขยันกันจริง ๆ ทำทุกวันเล้ย

Using that ramekin is ,in fact, not my idea..it's suggested in the recipe and I tried it cuz the dough seemed too soft to hold itself on ! Anyway, I didn't like much about the texture inside the ring..I preferred it rise naturally..welll nothing's perfect, is it??
