Fried Prawns with Orange Sauce (Kung Thot Rat Sot Som)
INGREDIENTS: 500 grams medium-sized prawns 1 cup of the juice of Chinese oranges (som cheng or orange) SAUCE: 1 tbsp wheat flour 1/2 cup sugar 1/2 tsp salt 1 cup cooking oil for frying
PREPARATION: 1. Wash, shell, and devein the prawns.
2. Pour the oil into a wok over medium heat. Fry the prawns, and when done, arrange on a plate.
3. Mix in a saucepan the orange juice, sugar, and salt, heat, stir until the sugar dissolves, mix the flour with a little water and add to the pot, continue stirring until the sauce has thickened, and then dip out over the fried prawns.
