Whole orange and chocolate cake
Nothing is new to make this kind of cake...only using a whole orange that attracted me to give it a try!
Anyway ,once the cake was turned out on a wire rack..I found it look not as good as the original is for some reason...so I decided to make a chocolate glazing to top it up!
Ingredients:
1 small orange (about 200g) 100g self-raising flour 1tsp ground cinnamon 1tsp ground coriander ( I skipped this one since I don't fancy its smell) 2tbsp cocoa powder 100g ground almonds 175g softened butter 175g light muscovado sugar 4 eggs ,separated
For the glazing ,
130g dark chocolate 65g butter
Method:
1. Butter and line the base of a 22-23cm cake tin with baking parchment. Put the orange in a pan and cover with water. Bring to boil,simmer ,partly covered, for 1 hour then drain and leave to cool enough to handle. heat oven to 160c gas4.
2. Halve the orange ,remove the pips ,then chop (without peeling). Put in the food processor and work to a rough puree. Sift together the flour ,baking powder ,spices and cocoa. Stir in the ground alomonds.
3. Beat the butter and sugar until light and fluffy. Beat in the yolks and the orange ,then fold in the flour mix. Beat the egg whites until stiff then fold gently into the cake mix in two batches.
4. Pour into the prepared tin ,then bake for 40-45 mins until firm. ool for 5 mins in the tin ,then turn out and cool on the wire rack.
5. Make the glazing by melting the dark chocolate and butter in a bowl set over a pan of simmering boiled water. Remove from the heat and leave it until thickened and use to cover the cake.
