Bibingka cake
Bibingka is a philippines cake which is so easyyyy to make and I found its taste is similar to a combination of Thai Babin and Khanom Chan ! Everybody (even my husband) in my family loves it!!
And having had a Philippines friend,It's a benefit that I couldn't miss!!!
Here are all ingredients..
300g glutinous rice flour 225g granulated sugar 2 eggs 1 small can of coconut milk (about 180 g) 1 small can of evaporated milk (about 160 ml ) ,plus few tablespoons if the mixture is too sticky 1 young coconut meat (discard the juice) some grated cheddar cheese ,for topping
To make it..heat the oven to 200c ,line the base of 8*8 square tin with a buttered baking parchment and mix everything but grated cheese and young coconut meat.
Mix with an electric hand mixer until smooth..then pour into the prepared tin.
Top with the cheese and grated coconut meat..
And bake for 40-45 minutes until golden brown on top...
