Warm tartlets with pear and rocket
This is for a cheese lover..especially a smelly one like blue cheese!
But also..it's not too bad for anyone who is not a big fan of cheese...try it before judging..
Ingredients (serves 6)
375g puff pastry 2 tablespoons creme fraiche 1 pear (ripe) 150g rocquefort cheese in small cubes (or Stilton or other blue cheese) 1 beaten egg 50g rocket, a few cherry tomatoes squeeze lemon juice 2 teaspoons olive oil, and salt and pepper Methods
1. Roll pastry, make 6 squares (about 12cm each side). Score a 2cm border round the edge (not right through).
2. Mix creme fraiche and salt & pepper and spread a teaspoon over the centre of each square.
3. Core the pear and slice thinly (skin still on). Divide between the 6 squares, placing a few slices on each. Top with cubes of cheese. This will now keep in the fridge if you cover with cling film.
4. To cook: brush beaten egg around the borders of each square, cook in oven at 200 deg. for about 15 mins. Mix rocket, lemon juice, olive oil, salt and pepper, and put on top of each tartlet. scatter the cherry tomatoes around. Enjoy!
