This simple and plain cornbread is very easy to make and I prefer it to the previous one I've made !
The recipe is created by a local chef who works for CitySuper, one of high-end supermarkets, where has been launching cooking classes for few years..and I've got it from a free-leaflet shelf located at one of thier branches , and honestly speaking, I wouldn't have given it a try if I didn't have to get rid of almost out-of-date creme fraiche !
And because I didn't expect to get a decent outcome, so I didn't bother to take any photo through the procedures...and when I tasted it, I just thought it's far too good to be unpublished...
Ingredients:
(A)
1 1/4 cup plain flour 2-3 tbsp brown sugar 1/2 cup cornmeal 1.5 tsp baking powder
(B)
3 large eggs 1/2 cup creme fraiche 1/2 cup milk 65g melted butter 1/2 tsp salt
Method:
1.Mix the ingredients A well in a bowl 2.Mix the ingredients well in another bowl. 3.Add mixture A and B in a large bowl and mix well. 4.Pour into 8*8 inches greased and base lined with parchment paper and bake in preheated oven ( 180c) for 35 minutes. Cool on a wire rack and cut into slices while still warm.
