Chicken Tamale Casserole
Mexican tamales (tamal is the Mexican "singular" use of the word) are packets of corn dough with a savory or sweet filling and typically wrapped in corn husks or banana leaves. The packets are steamed and eaten traditionally served with Atole (masa drink). Contrary to what is found in most American-Mexican restaurants, most tamales are not served with a sauce, but rather simple and plain.
I came accross this cheaty casserole from here which looks dead good,yet simple to make..with no experience about the dish, I then decided to give it a try with a minor modification in the recipe..just to suit my supplies on hand !
Here is my version..
Ingredients
1/2 cup (2 ounces) preshredded 4-cheese Mexican blend cheese, divided 3 tbsp milk 1/2 egg 1/2 teaspoon ground cumin 1/8 teaspoon ground red pepper 7 ounce can cream-style corn 1/2 (4.25 ounce) box corn muffin mix (Jiffy) 1 chopped green pepper Cooking spray 1/2 (5-ounce) can red enchilada sauce (such as Old El Paso) 3 pieces of shredded cooked chicken breast sour cream
Preparation
1. Preheat oven to 400°.
2. Combine 2 tbsp cheese and next 7 ingredients (through pepper) in a large bowl, stirring just until moist. Pour mixture into a greased 8-inch square baking dish.
3. Bake at 400° for 15 minutes or until set. Pierce entire surface liberally with a fork; pour enchilada sauce over top. Top with chicken; sprinkle with remaining 3/4 cup cheese. Bake at 400° for 15 minutes or until cheese melts. Remove from oven; let stand 5 minutes. Cut into 4 pieces; top each serving with 1 tablespoon sour cream.
