I would have made a enchalida sauce by myself ( cuz it's not complicated!) if I didn't happen to see a canned one on a supermarket's shelf and that's why I called it 'cheaty'..what I did is to add some chopped green pepper into a heated sauce and spread it over rolled stuffed tortillas, then sprinkle with some grated cheese before baking it for about 20 minutes ! Served it with some green salad and guacamole..yummyy..
