Chorizo & pork belly with haricot beans
When using pork belly..I'd rather cook it in asian style than western despite the fact that there are lots of interesting (western)recipes ! On the other hand, as far as I've noticed, it doesn't seem popular among the westerners for some reason...
My husband loves it though but he sometimes dislikes the way I've cooked it ,especially in chinese style ..so, this time I chose to make something new..just for a change !!
The original recipe is from bbcgoodfood where is the first place I always go to search for a recipe. I opted for this one cuz it has everything in one pot. Anyway, I modified the recipe a bit which I actually don't think it made any difference.. what you need most is time to get it done !!
Ingredients: ( modified version )
400 g piece of boneless pork belly , skin removed olive oil 3 rashers smoked bacon,chopped 1/2 large onion , chopped 2 garlic cloves , roughly chopped 1/2 tsp paprika 1 chorizo sausage , roughly chopped 300g chopped tomatoes 75ml red wine 1 cup chicken broth 300g haricot or cannellini beans , drained and rinsed 1/2-1 tbsp sugar a bunch coriander
Method:
1. Heat the oven to 160C/fan 140C/gas 3. Cut the pork belly into large chunks. Heat 1 tbsp oil in a large, ovenproof casserole and fry the pork in batches over a high heat until browned all over, then remove with a slotted spoon.
2. Add the bacon and cook for 2-3 minutes until golden, then reduce the heat slightly and add the onion and garlic. Cook for 2-3 minutes until softened. Stir in the paprika and chorizo and cook for a minute or so. Return the pork to the pan and tip in the tomatoes. Pour in the wine and the stock. Season, cover and cook in the oven for 2 hours. Stir in the haricot beans and return to the oven, without the lid, for 20-30 minutes. Stir in the coriander and serve.
