สารอาหารต้านโรคตา (e-magazine)

ดวงตาเป็นหน้าต่างของหัวใจ ดังนั้นคุณจึงต้องดูแลตาคู่สวยให้ดีอยู่เสมอ โดยปัญหาของโรคตาอาจส่งผลให้เกิดภาวะตาบอดหรือความบกพร่องในการมองเห็นได้ ซึ่งความพิการที่น่าสลดใจอย่างปัญหาตาบอด หรือสายตาเสีย ก็มักจะเกิดขึ้นในประเทศกำลังพัฒนา แต่ทั้งนี้ความพิการทางตาก็สามารถป้องกันและรักษาได้

          โดย ดร.สุจินต์ โตวิวิชญ์ เผยว่า โรคตาต่าง ๆ มีความเกี่ยวพันกับภาวะขาดสารอาหาร โดยสารอาหารที่มีข้อมูลสนับสนุนว่ามีความสัมพันธ์กับโรคตา คือ วิตามินเอ ธาตุสังกะสี วิตามินอี และวิตามินซี

วิตามินเอ

          วิตามินเอเป็นวิตามินที่ละลายในไขมัน แหล่งอาหารที่ให้วิตามินเอสูง ได้แก่ ตับ ไข่แดง น้ำมันตับปลา นม ผักใบเขียวเข้ม มะละกอ ฟักทอง มะม่วงสุก ฯลฯ วิตามินเอมีความสำคัญต่อ ร่างกายในด้านการมองเห็นในแสงสลัว การบำรุงรักษาเซลล์บุผิว การเจริญเติบโต การทำงานเป็นปกติของระบบสืบพันธุ์ และระบบภูมิคุ้มกัน

          อาการทางตาของการขาดวิตามินเอ เริ่มจากอาการตาบอดกลางคืนในระยะแรก คือ อาการเยื่อบุตาขาวแห้ง เนื่องจาก การสร้างเมือกตามเยื่อบุต่าง ๆ ลดลง การสร้างน้ำตาเพื่อหล่อเลี้ยงตาลดลงอย่างเห็นได้ชัด เมื่ออาการขาดรุนแรงขึ้น จะพบลักษณะที่เรียกว่า "เกล็ดกระดี่" เป็นคล้ายรอยแผลที่เยื่อตาขาว มีลักษณะย่น เมื่อมีภาระขาดมากขึ้น เยื่อกระจกตาจะแห้งทำให้ตาบอดได้

สังกะสี

          ธาตุสังกะสีมีความสำคัญต่อการเจริญเติบโตและการแบ่งเซลล์ การคงสภาพของผนังเซลล์ การมองเห็นในที่มืด การรับรส และระบบภูมิคุ้มกันในร่างกาย อาหารที่ให้ธาตุสังกะสีในปริมาณสูงและมีการดูดซึมได้ดี คือ เนื้อสัตว์ อาหารทะเลจำพวกหอย ไข่ และผลิตภัณฑ์นม ในคนและสัตว์ถ้าขาดสังกะสีแล้วจะเจริญเติบโตช้า ผมร่วง ผิวหนังอักเสบและมีรอยโรค อุจจาระร่วง ภูมิคุ้มกันบกพร่อง ตาบอดกลางคืน การรับรสผิดปกติ แผลหายช้า มีนิสัยและพฤติกรรมผิดแปลก

ธาตุสังกะสีเป็นองค์ประกอบของเอ็นไซม์ซึ่งมีบทบาทสำคัญ ในการเปลี่ยนวิตามินเอให้อยู่ในรูปที่ร่างกายนำไปใช้ได้ และมีบทบาทในการขนถ่ายวิตามินเอจากตับไปสู่กระแสเลือด จึงได้ข้อเสนอแนะว่า การเสริมธาตุสังกะสีโดยเฉพาะในกรณีที่ร่างกายมีธาตุสังกะสีไม่เพียงพอ น่าจะเป็นประโยชน์ต่อภาวะการขาดวิตามินเอและการมองเห็นในที่มืด เป็นอย่างยิ่ง

วิตามินอี

          วิตามินอีเป็นวิตามินที่ละลายในไขมัน ทำหน้าที่เป็นสารแอนติออกซิแดนต์ วิตามินอีมีอยู่ในแหล่งอาหารทั่วไป เช่น น้ำมันพืช ถั่วเปลือกแข็ง ถั่วเมล็ดแห้ง ธัญพืชต่าง ๆ จมูกข้าวสาลี วิตามินอีมีบทบาทสำคัญในการป้องกันโรคตาในทารกคลอดก่อนกำหนด

วิตามินซี

          วิตามินซีเป็นวิตามินที่ละลายในน้ำ มีคุณสมบัติเป็นแอนติออกซิแดนต์ เช่นเดียวกับวิตามินอี หากขาดวิตามินซี ผิวหนังจะผิดปกติ แผลหายช้า การสร้างฟันผิดปกติ หลอดเลือดฝอยแตกง่าย โรคเลือดออกตามไรฟัน

          วิตามินซีมีอยู่มากในผลไม้ที่มีรสเปรี้ยว มะเขือเทศ ผักต่าง ๆ เช่น กะหล่ำปลี ดอกกะหล่ำ บรอคโคลี่ และผักใบเขียวหลายชนิด


ดวงตา


วิตามินซี และวิตามินอีกับต้อกระจก

ต้อกระจก เป็นสาเหตุประการหนึ่งที่ส่งผลให้เกิดความบกพร่องในการมองเห็น และปัญหาตาบอดในผู้สูงอายุ เนื่องจากวิตามินอี และวิตามินซีเป็นสารแอนติออกซิแดนต์

          จากการศึกษาในสัตว์ทดลอง พบว่า วิตามินอีและวิตามินซีมีผลในการป้องกันการเกิดต้อกระจกและผู้วิจัยได้เสนอแนะว่า การได้รับวิตามินอีและวิตามินซีเสริมนี้ สามารถลดอัตราเสี่ยงต่อการเกิดต้อกระจกลงได้ครึ่งหนึ่ง

ดังนั้นจึงพอสรุปได้ว่า วิตามินเอเป็นสารอาหารที่สำคัญในการรักษาลักษณะทางกายภาพและการทำงานของตาให้เป็นปกติ ภาวะการขาดวิตามินเอจะส่งผลให้เกิดความผิดปกติต่าง ๆ เริ่มจากอาการตาบอดกลางคืน เยื่อบุตาขาวแห้ง ย่น เป็นแผล ตามมาด้วยกระจกตาแห้ง ขรุขระ อ่อนเหลว และท้ายสุด หากไม่ได้รับการรักษาทันท่วงทีตาอาจบอดได้ ส่วนธาตุสังกะสีจะทำงานร่วมกับวิตามินเอในกระบวนการทางเคมี ให้เกิดการมองเห็นในที่มืด

          นอกจากนี้ ยังช่วยให้มีการสร้างโปรตีนตัวพาของวิตามินเอในตับ เพื่อจะได้ลำเลียงวิตามินเอไปยังเนื้อเยื่อที่ต้องการได้อีกด้วย มีการศึกษาที่แสดงว่า การให้สังกะสีเสริมในผู้ป่วยโรคตับจากพิษสุราเรื้อรัง และในเด็กวัยเรียนช่วยให้การมองเห็นภาพในที่มืดดีขึ้น

สำหรับวิตามินอี ซึ่งมีคุณสมบัติเป็นสารแอนติออกซิแดนต์นั้น มีรายงานว่า ช่วยลดอุบัติการณ์ และความรุนแรงของโรคตาในทารกคลอดก่อนกำหนดได้ และท้ายสุดนี้ คือการเสนอแนะว่า วิตามินอีและวิตามินซี ซึ่งมีฤทธิ์เป็นแอนติออกซิแดนต์ สามารถลดอัตราเสี่ยง ของการเกิดต้อกระจกในกลุ่มผู้สูงอายุ ซึ่งข้อเสนอแนะนี้ ยังต้องการการศึกษาเพิ่มเติม เพื่อหาข้อสรุปที่ชัดเจนต่อไป
