Vinegar with acetic acid higher than standard can cause hazard to health. Vice versa, lower than standard is also disadvantage to
consumers. The standard levels for acetic acid in vinegar were established by the Ministry of Public Health (Notification No.204/B.E.2543) at not less than 4 g/ 100 ml (4%) for distilled vinegar and fermented vinegar, and 4-7% for artificial vinegar. At present, the quantity of acetic acid in vinegar has still been found out of standard. The rapid screening on acetic acid quantity should be applied to control the quality of vinegar.

Health Impact

Consuming acetic acid in vinegar higher than standard causes mount corrosion and gastrointestinal tract damage.

Test Kit Tool

• 1 Plastic cup
• 2 Syringes
• 1 Plastic dropper of test solution
• 1 Plastic bottle of test solution
• 1 Sheet of test kit handbook

Procedure

1. Using first syringe, draw 1 ml of vinegar, push into plastic cup.

2. Add 2 drops of test solution (plastic dropper), shake together.

3. Using second syringe, draw 1 ml of test solution (plastic bottle), push into plastic cup, shake together. Observe the color of solution. If it changes to pink, read the result No. 1 in the table.

4. In case of no color in solution, add test solution (plastic bottle) for 0.8 ml more, shake together. Observe the color of solution, and read the result No.2 in the table.
