Milk is very important part of the white coffee always use fresh cold milk and milk temperature should be between 65 - 82 degree.
Stretching and Texturing the Milk The milk in the jug should be dense and creamy, with very fine bubbles over the surface of the milk. It should also look very 'shiny' on the surface if you swirl it in the jug. If there are any large bubbles on the surface of the mild you can gently tap the bottom rim edge on the bench and this will make them disapper.
