Carrot Cupcakes
Ingredients: - 1 cup cake flour - 2 eggs - 1/2 + 1/4 teaspoon baking powder - 1/2 teaspoon baking soda - 1/4 teaspoon salt - 1/2 cup white sugar - 1/2 cup vegetable oil - 2 cups grated carrots - 1 cup raisins - 1/4 teaspoon vanilla extract ( actually u've to put cinnamon powder but i dun have so i put vanilla extract instead)
Directions: 1. Preheat oven to 170 degrees C. 2.In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder and salt. Stir in carrots and raisins. 3. Pour into prepared paper cups. 4.Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center and comes out clean. 5.Too lazy to do the frosting, so I just sift some icing sugar on top for decoration and put some cashew nuts on it.
