Banana muffins

Last monday, I went for a walk with my friend and his son. Wewalked around Guelph downtown. On the way, we stopped at the coffe shop, my daughter wanted a muffins and milk, green tea for my friend and nothing for me (cuz i was sure that i would had the left over from my daughter Smileyhe he!!). The banana muffins was big but the taste wasn't that big. I though i probaby could bake it better!Smiley.

Until today i had time to made it my banana muffins (absolute bigginer virsonSmiley). I got this recipie fromt he book named"The world encycopedia of fruit". The original recipies was a fresh blueberry muffins. I did replaced the blueberry with bananas and add more sugar because the mixer wasn't sweet enough for me (i normally am didn't like to eat too sweet).Oh i used corn oil instead of butter. Here is the recipie:

2 and a half cup of all-purpose flour

1 tbsp baking power

1 tsp baking soda

10 Tbsp sugar (the original was 6 tbsp)

1 cup milk and 1 tsp vanila

1/4 cup corn oil

3 bananas

Here is how to make it:

1. Preheat the oven to 350 F. Stand 13 paper liners in a muffin pan. Sift the flour, baking power and the baking soda into a large bowl. Stir in sugar. Mix the milk, eggs, corn oil and vanila in a bowl and whisk lightly. Add to the flour mixed and fold together lightly.

2. Fold the mash banaha, then divide the mixture among the muffin liners. Bake for 20-25 minutes, or until the muffins are well risen and golder.

3. Remove the warm muffins from the pan; cool slightly on a wire rack

My opinion about this recipie:

It was delicious when compared with the muffins i bought from the coffee shop last monday because it wasn't too sweet. It was solfed and moisted muffins, but i still dreaming of the better taste, something more creamy.

If you have time, try it out and tell me how you like it. If you want to share your recipie, you're welcome.

Creamy orange Jame-filled scones

It was a hurry day for me, my 2 years old daughter woke up late. She had her breakfast around 9 a.m. and finished almost 10 a.m. She justate slow and played with her foods. I was invited for lunch at my friend place. It was a get together as usual. I offered to bring some dessert. Oh no!! lunch at noon and i had 2 hrs left for myself to get ready and made dessert. What was an easy quick thing! to made!!, I thought! Well, I came up with this recipies from the book "Good house keeping Great baking"

The Creamy orange jam-filled sconeswas modified from3 recipies, cream scones, orange scone, and jam-filled scones.

Here are all the ingredients:

2 cups all-purpose flour

2 tsp baking powder

1/2 tsp salt

1/4 cup sugar

4 tbsp cold butter, cut up

1 large egg

1 orange and 4 tbsp of raspberry jam

2/3 cup whipping cream

Here is how to make it:

1. Prehear oven 400 F. In a bowl stir together flour;baking power; salt; and sugar. With pastry blender cut in butter until mixture resembles coarse crumbs.

2. Stir egg; freshly grated prange peel and whipping cream, into flour mixture just untill dough hold together

3. Transfer dough to ungreased large cookie sheet. With lightly floured hands, devide dough in half, shape 1 dough half into asize as needed spread with jam. Place remaning dough on top of jam. Cut into wedges but notcut throught jam.

4. Bake 20 minutes or until golden. Separate scones and serve warm or transfer to wire rack to cool.

My opinionabout this recipe:

I am not a big fan of scones. however, the taste was ok for me and my daughter. Some of my friend said it was good, but the texture is still not that fluffy. If you have time try it out and tell me what you think about it.

Thank you and enjoy your day!!SmileySmileySmiley
