Bacon and Cheese Muffins
99% of muffins I've seen or made are all sweet types...so it's good to make a savory one once in a while..just for a change!!
Ingredients: (makes 6)
175g plain flour 1/2 tsp salt 1 tsp baking powder 50g mature cheddar 4 rashers bacon, cut into small pieces 1 tbsp parsley, chopped 85g unsalted butter, melted 2 eggs 200 ml milk 1 tsp english mustard (I used powder + water)
Method:
1. Heat oven to 180c/fan or 160c/gas and grease 6 wells of a muffin tin. Fry bacon in a pan until crisp, then tip onto kitchen paper and allow to cool. Cut 2/3 of cheese into little pieces ,the finly grate the rest.
2. sift the flour,salt,baking powder and a little pepper into a bowl. Whisk the mustard,milk,butter,egg in a jug. Pour the wet mixture into the dry mixture and stir just combined ( will be runny and lumpy, don't try to make it smooth). Add bacon,cheese pieces and parsley, being careful not to overwork the mix.
3. Spoon into the greased wells ( will be quite full), sprinkle each with the grated cheese, then bake for 25 minutes or until golden risen and firm to touch.
