I was attracted to this recipe because of using three kinds of chocolate ....and it's a cheesecake which I haven't made it for agessss...
Let's see how to make it..
For the base :
150 g digestive biscuits ,crushed 50 g butter ,melted
Press into the base of the tin and leave to set. Chill in the fridge.
For the cheesecake :
75 g white chocolate ,roughly chopped 300 ml double cream
Place both in a saucepan and heat gently until the chocolate has melted.Stir until smooth and reserve..
3 medium eggs,beaten 50 g caster sugar 400 g soft cream cheese 2 tbsp cornflour
Beat the sugar and eggs until light and creamy ,add the cream cheese and beat until the mixture is smooth and free from lumps. Stir the reserved white choc cream together with the cornflour
Add dark chocolate (75 g roughly chopped) and milk choc (75 g roughly chopped) to the cream cheese mixture and mix until blended. Spread over the chilled base ,place on a baking sheet and bake for an hour in the preheated oven (180c)
Switch off the heat ,open the oven door and leave the cheesecake to cool in the oven..
Chill in the fridge for at least 6 hours ( I left it overnight though) before removing the cake from the tin.
Cut into slices and transfer to a plate. Serve with framage frais or sour cream..
