เมนูแกงผักกาดดองแบบเวียดนาม จัดเป็นหนึ่งในเมนูที่คุ้นเคยกันดีของชาวบ้านนาจอก ทั้งนี้เนื่องจากในยุคก่อนบ้านนาจอกเป็นชุมชนที่มีการปลูกผักปลอดสารกันมาแต่ดั้งเดิม ด้วยเหตุนี้จึงมีผักมากมายที่เหลือจากการขายและการบริโภคสด จึงมักมีการดอง หรือถนอมผักด้วยวิธีอื่น ๆ เพื่อยืดระยะเวลาการบริโภค และแน่นอนว่าผักกาดเขียวปลีก็เป็นหนึ่งในผักดองบ้านนาจอกที่มีมากแทบจะทุกบ้าน ดังนั้นเมนูแกงผักกาดองนี้จึงจัดเป็นเมนูเก่าแก่ดั้งเดิมคู่ครัวเรือนบ้านนาจอก

ผักกาดเขียวปลีดอง มักเรียกกันอย่างลำลอง ว่า dưa (เยือ หรือ ซรือ) ที่บ้านนาจอกเวลาดองมักนิยมดองคู่กับต้นหอม เมื่อเปรี้ยวได้ที่แล้วนอกจากนำไปแกงกับซี่โครงหมู หรือแกงกับปลา ( ซึ่งนาน ๆ จะเห็น)
ก็ยังนำมากินแกล้มกับหมูหัน ขาหมูต้ม หรือไก่ต้ม ตัดเลี่ยนได้เป็นอย่างดี
การดองผักกาดเขียวปลีทำได้ไม่ยากผู้เขียนยังจำได้ดีเมื่อตอนเด็ก ๆ ยายจะนำผักมาตัดแต่ง ส่วนใบตัดแยกออก ส่วนใจผักคงไว้ แล้วล้างให้สะอาด จากนั้นดองน้ำเกลือเสีย 2 คืน โดยใช้ถุงใสบรรจุน้ำทับผักให้จมลงในถังน้ำเกลือ
ทั้งนี้เพื่อให้ผักยุบแต่ยังคงคงความกรอบ และผักจะคายความขมออกไปกับน้ำเกลือ (ยายจะไม่บีบผักเพราะจะช้ำและสีไม่สวย)
หลังจากทิ้งไว้ 2 คืนก็จะเทน้ำเกลือทิ้ง แล้วจึงเตรียมน้ำดองผักใหม่อีกครั้งโดยยายจะใช้น้ำซาวข้าว เกลือ และน้ำทรายแดง (ช่วยให้สีผักดองสวย) ดองต่อไปอีก 2-3 คืนก็เปรี้ยวได้ที่กำลังดี

วัตถุดิบ
1.กระดูก/ซี่โครงหมู ครึ่งกิโลกรัม
2. มะเขือเทศ 3 - 4 ลูก
3. ต้นหอมสำหรับโรยหน้าตามชอบ
4.หอมแดง 3-4 หัว
5. ผักกาดดองอย่างเปรี้ยว 2 ต้น ไม่ต้องล้างน้ำ
หั่นเป็นชิ้นพอประมาณ ส่วนน้ำดองผักอย่างทิ้งให้แยกไว้เติมในน้ำแกงจะช่วยให้ได้รสเปรี้ยวอร่อย

เครื่องปรุงรส
1.น้ำปลา
2.เกลือ
3.ผงชูรส
4.น้ำตาลกรวดเล็กน้อย (สูตรดั้งเดิมไม่ใส่)
5.ดอกเกลือ

วิธีปรุง
1.ล้างกระดูกหมู/ซี่โครง ด้วยน้ำเกลือ 1 รอบ ล้างด้วยน้ำสะอาดอีก 1 รอบ จากนั้นพักไว้ให้สะเด็ดน้ำ
2. เริ่มต้มกระดูกหมูด้วยไฟแรง พอน้ำเดือดให้ช้อนฟองออก จากนั้นค่อยเบาไฟต้มต่อไปราว ๆ 40 นาที่เพื่อให้กระดูกหมูนุ่ม
3. เมื่อได้ที่แล้วเติมน้ำสะอาดตามต้องการ เมื่อน้ำเดือดเติมดอกเกลือครึ่งช้อนโต๊ะ
4. ทุบหอมแดงลงไป รอสักครู่แล้วจึงค่อย ๆ เติมผักกาดดองที่หั่นลงไป
5. ต้มสักครู่พอผักสุกให้เติมมะเขือเทศลงไป
6. ปรุงรสด้วยน้ำปลาดี ดอกเกลือ และผงชูรส
7. ชิมรสถ้ายังไม่เปรี้ยวให้เติมน้ำผักดองลงไป ค่อย ๆ เติมไป ชิมไป แต่หากเปรี้ยวไปให้เติมน้ำตาลกรวดเล็กน้อย
8. ปิดแก๊ส แล้วโรยต้นหอม เสิร์ฟร้อน ๆ ทานกับข้าวสวยอร่อยเหาะ
