Steamed Pudding with Strawberry Sauce
Steamed Pudding with Strawberry Sauce
Ingredients
- 3 egg whites, whipped to soft peaks
- 3 egg yolks
- 1/2 cup castor sugar
- 1 teaspoon vanilla essence
- 1 tablespoon butter, melted
- 2/3 cup milk
- 1 1/3 cups self raising flour, sifted
- 3/4 teaspoon baking powder
Strawberry Sauce
- 500g strawberries, chopped
- 1 1/2 tablespoons icing sugar
- 1-2 tablespoons Cointreau, Grand Marnier or
Strawberry liqueur (optional)
Method
- Marinate 375g strawberries in icing sugar
(& liqueur if using) for 30 mins
- Preheat oven to 180 C
- Whisk sugar, vanilla & egg yolks together until
creamy, add melted butter, milk, flour & baking
powder then carefully fold in beaten egg whites
- Grease a fluted pudding basin, place one third
of the marinated strawberries in the bottom, pour
in the batter & cover top with baking paper or alfoil
- Place pudding basin in an oven dish & add 2 cups
warm water to the dish
- Bake for approx 1 hr or until a skewer pushed
into the centre of the pudding comes out clean
- Leave to sit in the pudding basin for 5-6 mins
before turning out
- Puree remaining marinated strawberries, heat
gently in a saucepan or in the microwave & pour
over prepared pudding
- Cut the pudding into wedges & serve with
remaining whole fresh strawberries
