1 cup butter or margarine, melted 1 tsp vanilla extract 2 cups dark brown sugar, packed 1/2 cup buttermilk 2 cups all purpose flour 1 tsp baking soda 1/2 tsp salt 4 cups rolled oats(not quick cooking)
In a large bowl, beat together butter, vanilla, sugar and buttermilk until ingredients are well blended.
Add flour, baking soda and salt. Stir in oats. Mix well. Using a rounded teaspoon of dough for each cookie, drop onto greased baking sheets, leaving 2 inches between each. Dip fingers into water. Press dough down about 1 1/2 inches in diameter.
Bake at 350 degrees F for 8 to 10 minutes until cookies are light golden brown. Do not overcook.
Immediately remove cookies from baking sheet to wire rack or loosen with pancake turner to avoid sticking.
