Hello!! Don't be stunned with German language, it's just a cake that I got inspired by a cook book by Dr. Oetker : German Baking Today. I just changed from Butter cake according to the recipe into Sponge Cake (which I think it would click with Thais' preference). They tend to like soft texture-cake. Anyway, Let's have a look what is all about Waves of Danube.
Her is the final result. Actually these 2 colors must go up and down like waves but mine looks like still water , Not even a ripple!! The circle piece in the middle of the cake is Dark Cherry and topped with custard and chocolate and make more waves over.
สูตร สปันจ์เค้ก(Sponge Cake Recipe)
ส่วนผสม A (Mixture A)
100 กรัม (Grams) แป้งเค้ก (Cake Flour)
1/2 ช้อนชา (tsp) ผงฟู (Baking Powder)
1/2 ช้อนชา (tsp) เบคกิ้ง โซดา (Baking Soda)
ส่วนผสม B (Mixture B)
100กรัม (Grams) น้ำตาล (Sugar)
1/4 ช้อนชา (tsp) เกลือ (Salt)
1/2 ช้อนชา (tsp) วานิลา (Vanilla)Essence)
10 กรัม (Grams)SP (Emulsifier)
50 มิลลิลตร (ml) นมข้นจืด (Evaported Milk)
30 มิลลิลตร (ml) น้ำ (Water)
3 ไข่ฟองใหญ่ (Large Size Eggs)
ส่วนผสม C (Mixture C)
50 กรัม (Grams) เนยละลายส่วนที่ 1 (Melted Butter Part 1)
ส่วนผสม D (Mixture D)
10 กรัม (Grams)ผงโกโก้ (Cocao Powder)
30 กรัม (Grams) เนยละลายส่วนที่ 2 (Melted Butter Part 2)
Beat all ingredients of mixture B at high speed for approximately 7 mins or until the mixture double or even triple in volume and texture is like Hair Mousse or Shaving cream. The tip of this process is using Fresh eggs and New SP (Stabilizing agent) otherwise the mixture will not be well-coporated or even doubled in volume. Been there, done that already! Believe me!
Put in Mixture A gradually with low speed of beating, keep beating for 1 more minute. Then pour melted butter in thin stream at medium speed til butter finished and beat at hi speed to emulsify butter for 10 seconds.
Split the batter into 2 halves. Rest one half and continue for the other. Sorry for not taking foto well enough in detail because I don't have any helper (or other word, NO Stunt!!) So it might be a lot to read at this process.
Before continuing the other half of batter, Mix the ingredients of Mixture D well (melted butter and cocoa powder). Pour in thin stream at medium speed til finish all up. Beat at high speed for another 5 seconds since we have less batter.
Then prepare Dark Cherry by straining the juice out then pat them dry. Or you can mix cherry with flour and get rid of the excessive flour so they won't sink at the bottom of the mould ( I heard this trick from my sister , Lee) Unfortunately, I didn't do both methods because I was too hurry (forgot).
Because of my greed, I put to many cherries (not even pat them dry) . There will be a consequence for my action later on. Bake at 350 F for 35 mins. When the cake is completely cooked leave in the mould for 5 minutes and take the cake off the mould
you can use Milk Chocolate if you want but I prefer dark chocolate which I think it goes well with sweet custard. I put chocolate and oil at the same time on double boiler on double boiler
Thanks for the comment and the laugh hahahaha. I'm not sure if banana and strawberries are the ideal combination though. I just used it because it reminded me off the banana-choco crepe I had long time back. Sure can for your birthday hahaha ^_^
