Ingredients 350 g ,sweet potatoes ,steamed,peeled 60-80 g,tapioca starch 1 teaspoon,baking powder 1 tablespoon, rice flour 80-100 g,sugar 1/4+1/8 teaspoons,salt oil for deep fried
Method -sift flour+baking powder together a time -in a mixing blow,add all ingredients with low speed and start to medium speed as in video till mix well cover with film on it ,leave it at room temperature for 30 mins -make 2cm balls size about 45-50 balls - deep fried with medium low heat about 12-15 mins until golden brown and outside of balls become to crispy,

-used wok spatula at first, after a moment change to asian wire mesh strainer rolling and press dough follow by video.. -if boiled potatoes must used flour more because it too wet than steamed -texture of this dessert must be crispy outside and solf ,sticky a bit inside ...not too dry ...do not used high heat
-some local in thailand call this desert other name is khai tao
