3 eggs 6 oz butter 3/4 cup sugar 1 cup plain flour 2 Tbs orange juice 1 cup self raising flour 2 tsp orange rind grated
Method
1. In a bowl cream the butter with sugar and orange rind until light and fluffy. 2. Beat the eggs well and gradually add to the creamed mixture beating well after each addition. 3. Sift the plain and self raising flours together and stir in alternately with the orange juice. 4. Place in a well greased loaf tin. Bake the Orange Cake at 325 degrees for 1 1/4 hours.
Sauce Ingredients:
2 cup Orange Juice 1/2 cup Sugar 2 Tps cornstarch 3 Tbs butter 1 teaspoons unflavored gelatin
Make Orange Sauce: 1. Combine gelatin and oranges into a a small saucepan. let it stand for one minutes. 2. Add cornstarch and sugar stir with a wooden spoon until cornstarch is moistened 3. Bring to simmer over medium-low heat; simmer 5 to 6 minutes or until sugar dissolves. 4. Add butter, stir with a wooden spoon until the mixture thickens 5. Remove from heat , Let the sauce cool down and then pour over the cake.
