3 c. all-purpose flour 1 c. unsalted butter 2 eggs 1/3 c. iced water
FILLING:
1/2 c. butter 3 c. finely chopped walnuts or pecans 1 c. brown sugar, packed
GLAZE:
1 c. each sugar and honey 1 c. water 2 tbsp. lemon juice
1. Combine flour and butter in a bowl. Beat either by hand, electric mixer or food processor until well combined. 2. Thoroughly mix eggs in the iced water. Add to flour-butter mixture, mixing only until ingredients are well combined. Form dough into a ball.
3. Cut dough into quarters. Shape into rounds. Wrap in wax paper. Chill in refrigerator for at least 1 hour.
4. Meanwhile, prepare filling. In a heavy saucepan, melt butter. Add nuts and sugar, mixing well. Set aside.
5. Combine ingredients for glaze in a heavy saucepan. Bring to a boil. Simmer for 5 minutes.
6. Roll out each portion of dough into a 10 inch round. Put 1 round into a buttered quiche pan. Spread evenly with 1/3 of the filling. Repeat with remaining dough and filling. Pour half the glaze over the top.
7. Bake at 375 degrees for 35 to 40 minutes. Remove from oven. Pour remaining glaze over the top and serve.
Tips: This dessert tastes even better when each serving is topped with a fluff of whipped cream.
