10 water chestnuts, diced 2 cups corn flour 1 cup gelatin 3 cups water 1 cup young coconut meat, cut into strips 3 cups sugar 3 cups jasmine-scented water Green and red food colouring
Put the corn flour in a bowl. Add a few drops of the red food colouring to the flour. Mix well. Coat the diced water-chestnuts with the flour. Drop into boiling water. When the coated water-chestnuts float, remove from the boiling water. Leave in a bowl of cold water. Set aside. Dissolve the gelatin in the green coloured water. Bring to the boil. Leave to set in the refrigerator and cut into strips. Serve the mixture of diced water-chestnuts, gelatin strips and coconut strips with syrup and crushed ice.
