200 Grams Sugar (น้ำตาลทราย 1 ถ้วย) 3 Lemon Zest from 3 Lemons (ผิวเลม่อนขูด 3 ลูก) 4 Large Size Egges (ไข่ฟองใหญ่ 4 ฟอง 3/4 Cup Lemon Juice ( น้ำเลม่อน 3/4 ถ้วย ) 300 GramsUnsalted Butter (room temp.)
Lemon,Sugar ,Butter 300 grams prepare your lemon zester need only yellow zest mix lemon zest with Sugar ,Rub sugar and zest with fingers til moist & grainy. moist & grainy
Prepare the rest of the ingredients. Mix Egges in Sugar Mixture, Pour in Lemon Juice ,Then put the mixture on direct heat or double boiler.
Remove from the heat and transfer to food processor and blend in soft butter, Whizz.....z ,Come out so smooth. At first the smell of butter was so strong but after I have put in the fridge to cool down. the butter smell was gone. It tasted so nice and smooth on your tongue
bakeblind your pie shell ,fill in pie shell with lemon cream ,I did Italian meringue which I don't think it is nescessary. Swiss or French Merringue could be done and easier too, pipe on the pie
Put under salamander or Broiler until golden brown
