Ingredients: • 2 tablespoons olive oil • 1 onion (diced) • 2 carrots (diced) • 2 celery stalks (diced) • 3 cloves garlic (minced) • 6 cups broth • 2 cups vegetables or protein • Salt and pepper to taste
Instructions: 1. In a large pot, heat olive oil over medium heat. 2. Add onion, carrots, and celery. Cook until soft, about 5 minutes. 3. Add garlic and cook for 1 more minute. 4. Pour in broth, bring to a boil, then add other vegetables or protein. 5. Reduce heat and simmer for 15–20 minutes. 6. Season with salt and pepper. Serve warm with fresh herbs.
