Nothing's new and special for this kind of cake...I think most of you know how to make it!
Ingredients
3 medium-sized ripe bananas 1 tsp lemon juice 150 g soft brown sugar 75 g butter 250 g self-rising flour 1 tsp cinnamon 3 medium eggs 50 g walnut,chopped 1 tsp each caster sugar and cinnamon ,to sprinkle
You also need 7 inch cake tin ,grease the tin and line the base with baking paper. Preheat the oven 190 c.
Method:
Firstly ,mash two of the bananas and mix lightly with lemon juice and a spoonful of brown sugar..
Heat the butter and the remaining sugar until the butter has just melted..pour into a small bowl and leave to cool a bit. Then beat the eggs into the sugar mixture and pour into a bowl of the sifted flour+cinnnamon (make a well in the centre)...mix through.
Stir in the bananas and speard half the mixture over the tin ,layer the sliced banana (the remaining one) on top and sprinkle with chopped nuts then cover with the rest of the banana mixture..
Bake for 50-55 minutes until golden brown.. Leave it cool in the tin before turning out and sprinkle with sugar and cinnamon!
