น้ำพริกกะปิ
เครื่องปรุง
กะปิเผาไฟพอหอม 3 ช้อนโต๊ะ
กระเทียมปอกเปลือกแล้วซอยหยาบๆ 1 ช้อนโต๊ะ
พริกขี้หนูเด็ดก้าน 1 ช้อนโต๊ะ
น้ำมะนาว 3 ช้อนโต๊ะ
น้ำปลา 3 ช้อนโต๊ะ
น้ำตาลปี๊บ 2-3 ช้อนโต๊ะ
มะเขือพวงหรือมะเขือเปราะซอย 1 ช้อนโต๊ะ
วิธีทำ
1. โขลกกะปิกับกระเทียมให้ละเอียด ใส่กุ้งแห้งโขลกรวมกัน ใส่พริกขี้หนู มะเขือพวง ปรุงรสด้วยน้ำตาล น้ำปลา และน้ำมะนาว ชิมรสตามต้องการ
2. รับประทานกับผักต้มราดกะทิ เช่น ถั่วพู ถั่วผักยาว หน่อไม้ ตำลึง ผักกระเฉด ฯลฯ หรือผักสดต่างๆ เช่น แตงกวา มะเขือสด ผักบุ้ง กระถิน หรือผักชุบไข่ทอด เช่น ชะอม มะเขือยาว
3. จัดแนมกับน้ำพริกคือ ปลาทูทอด ปลาช่อนทอด ปลาดุกย่าง
หมายเหตุ
ใช้มะม่วงดิบซอยแทนมะนาว หรือมะดันซอน หรือมะขาวอ่อน ตามแต่ฤดูกาล
