Chicken Farm Baker's Project #8 : Pang Gub Pa in summer! ; Petits Pain Au Lait

My assignment is 'French Bread', "ohhhhh" is a big word
step out in my head ka :o
If I were N'Gam or Aum--French Pastry professional ;),
I may make croissant, but this is me555, still cannot 555,
besides it is 35C in Thailand.
The one I chose came from this LCB book ka
Petits Pain Au Lait is very suit for morning coffee
or make them as a toast after 2-3 days passed (if left)
Texture is very good, outside is a bit sticky but soft.
Not soft as bread that we used to eat here.
When you bite, you can taste French bread!
French bread flour (I don't have, any you have ka) 340g
Fresh Yeast 15g (or instant dry yeast 4g)
Salt 8 g
(some egg wash for brushing on top before baking)
Since I don't have good surface for kneading dough,
so I use my assistant -- bread machine ka.
If you knead by hand, you can follow steps below ka.
1. Make a hole in the middle of flour on clean surface
2. Put sugar, yeast, and salt separately in the hole
3. Pour milk into middle space of hole
4. Use your finger kneading yeast and milk, it will be like a paste
5. Then knead with other to get them to middle
6. Put butter in dough, try to knead well
7. When dough comes together, pick one side of dough and
fold to half (about middle of dough), do it about 3 times with
8. Then, try to make the dough as round shape, and wrap
for 1st fermitation about 45 mins.
For Bread machine, just click button 'making dough'.
Then, it should come out like this ka.
And this is after 1st fermitation ka.
Dough should raise up 2-3 times ka.
Divide dought into 50g pieces (about 12 portions)
Then knead to remove gas from dough, make them
round and put in bake tray. After finished all, cover with
cloth for 15 mins.
After 15 mins passed, knead to remove gas again.
Fold the dough like an making letter envelope .
And make them round, then knead them to be this shape.
or put in bake cup if you like ka.
Brush the egg wash and cover for 2nd fermitation
about 1.15hrs - 1.30hrs.
After 2nd fermitation ka.
Use scissor to make this.
Cover for 3rd fermitation about 15mins ka.
Then bake in preheated 220C oven for 15-17 mins
(depend on oven ka)

I made caramel cream and apple butter for this bread ka.
