Since I have been making cakes I have found that Banana Muffins are my favourite. My husband and I love them. They are very moist and sweet and perhaps I can persuade you to try them. I have baked them many times but just have a chance to show you guys on my blog. First of all, I would like to thank Khun Beebie for the recipe It was lucky I found her blog. Best of all they are really easy to make. Anyway, today I would like to bake “Banana muffins and Vanilla Biscuits. Let’s have a look at the recipe for them.
BANANA MUFFINS
200g bananas (2 large bananas) 200g Flour 3 eggs 1 ½ teaspoon Baking powder ½ salt 1 cup of oil 180g Sugar 1 teaspoon lime juice
º´¡ÅéÇÂäÇéÃÍ áÅéÇãÊè¹éÓÁйÒǼÊÁà¢éҡѹ
Mash bananas, stir in lime juice together.

Whisk eggs, sugar and salt together until smooth.

Since yesterday my husband told me that we are going to make Hot Cross buns. He told me just briefly about story that “Every year the Christian celebrate Easter. For this they have a four day Holiday. Friday until Monday. Friday is called Easter Friday or Good Friday. Sunday is called Easter Day or Easter Sunday. Friday is the day that Jesus was hung on the cross. So on this day we remember it by making the Hot Cross Buns. The Buns have a cross on the top and this is to remember Jesus on the cross”. If anyone would like to know more story about Easter if you don’t mind so you can search on Google.
Anyway, just would like to tell you guys briefly about this story that is why today I make the Hot Cross Buns. Let’s have a look on the recipe.
300 ml. tempted water 1 ½ tbs. sugar 1 tsp. salt 1 tbsp. of cooking oil 450 g high grade flour 1 tbsp. milk powder 2 tsp. mixed spice 1 tsp. cinnamon 2 ½ tsp. Bakers yeast
Add tempted water into the bowl of the Baker’s oven. Then add sugar, salt and oil. Next add all the dry ingredients except for the yeast. Now make a small hole in the top of the flour (as in this picture) this is for the yeast mixture.
After the bread has finished mixing take it out of the bowl. Next roll it into balls and place on a greased tray. Then cover with a tea towel and leave in a warm area for about 2 hours to allow the bread to rise.
The next thing, we need to do is make the cross on top. To do this we mix flour with water then stir to mix well. We need to make a firm consistency. Then we roll the mixture into long strips as in this picture.
After I pick up some mushrooms while I walked my little cute dog “Peppy” at Crown Park. Then my husband and I take her walking at another park. There are fruits at the park called “Blackberry”. Blackberry is one of my favourite fruits that I like. So I thought I would pick up some to make a jam. It is easy to make it. I know that from my mother in law told me. So today I will show you guys how to make blackberry jam. It is the same method that you make any jam such as Strawberry, Raspberry and Blueberry etc. Anyway, let’s have a look at some pictures.
Let’s talk about Blackberry. There are so many of them in the bush at Spa Park. These trees are not smooth like silk. It is not easy to get them because they have prickles in them and can hurt your hand. After I finished getting them my hand hurt a little. But not too bad I have lot of them when I get home.
Heat it in the pot until it simmers, then gently simmer for about 4-5 minutes as this picture. (I made the jam before going to have a shower. So that is why I’m wearing this dress. I hope that is not too sexy to be censored on my blog. )
My hand got very tired stirring the jam. As you will notice in this picture. Anyway, after add all sugar; stir for 5 minutes. Then remove from the heat. Let it cool down for about 30 minutes.
Sometimes when my husband goes to work, he takes me. One of his client that I met is called Robbie. She is a very lovely lady 82 years old. She loves to cook and sometime when she has baked cakes or cookies she offers some to my husband after he has finished his job.
The day before yesterday, Robbie rang up and wanted my husband to solve her computer problem. She also asked him to take me to see her as well. Robbie is a nice person and also enjoys having parties and company to talk with at home.. She told my husband that “I sometime want to take Minnie shopping or have lunch in town with some other ladies for a few hours”.
This time when I was there at her house. Robbie lent me 9 recipe books for cookies, cakes and also food recipes. It was very kind of her to let me borrow them. Anyway, I decided to bake some cookies from one of the books. Let’s have a look at what I choose to do. Here are Coconut Peties Fours, Plum Coconut Slice and Ginger Coconut Slice.

Put coconut, sugar and sifted flour into mixing bowl. Stir in lightly beaten egg, milk and vanilla. Mix ingredients well together. Roll mixture into balls the size of a walnut, pressing mixture well together. Place on oven trays which have been lined with aluminium foil (no greasing is necessary). Bake in moderate oven 25 – 30 minutes or until golden brown.
Plum Coconut Slice!!
BASE; ¾ cup plain flour ¼ cup self-raising flour 2 tbs. sugar 90g butter 1 egg ½ cup plum or other Jam
Base : Combine sifted dry ingredients in basin, rub in butter, mix to a soft dough with lightly beaten egg. Press dough evenly over base of well-greased 28cm x 18cm (11in x 7in) lamington tin. Spread evenly with jam, then topping. Bake in moderate oven 25 – 30 minutes, or until golden brown. Stand 5 minutes before turning on to wire rack to cool. Cut when cold.
Topping : Beat egg and sugar together with fork, mix in coconut.
Ginger Coconut Slice!!
60g butter 1 tbs. golden syrup 1 cup self-raising flour 1 ½ tbs. ground ginger ½ cup sugar ½ cup coconut 1 egg
LEMON ICING; 1 cup icing sugar 30g butter 2 tsp. lemon juice 1 teaspoon grated lemon rind 1 tsp. hot water
Melt butter and syrup over low heat. Sift flour and ginger; combine with sugar, coconut and lightly beaten egg. Pour in melted butter and golden syrup. When well combined press into well-greased 28cm x 18cm (11in x 7in) lamington tin. Bake in moderate oven 25 to 30 minutes. When slice is cool, spread with Lemon Icing and cut into squares.
Lemon Icing : Sift icing sugar into bowl. Combine soft butter, lemon juice, grated lemon rind and hot water, stir until butter melts. Mix into icing sugar, beat until smooth.
