Pate Sucree (2 Tarts shell) : Ingredients 1 1/4 cup all purpose Flour 1 tsp Sugar 1/2 cup Butter 1 Egg 1 tsp Salt 2 tsp water
Method: 1.mix flour and salt, rub in butter 2.add egg and enough water to make dough 3.wrap and chill 30 mins, 4.roll dough into round shape (Thickness 3mm.) 5.Softy press dough in buttered mould (Not too much butter and avoid finger print), get rid of excess dough, put in fridge for 15 mins. 6.Preheat oven 180c 7.Bake for 20 mins. The tart should have light brown colour,
Crème Patisserie Ingredients: 2 1/2 cup Milk 6 Egg Yolks 1/2 cup Sugar 4 tbsp Flour 4 tbsp Corn flour
Method: 1.whisk 6 egg yolks in a bowl, with 1/2 cup of sugar, then whisk in 4 tbsp flour and corn flour 2.Bring 2 1/2 cups of milk to boil and stir into egg mixture, pour into pan and bring back to boil stirring until cream thicken 3.cool down the cream in fridge 4.When the crèeme is cooled down, whisk until smooth 5.Fill Crème in piping bag, fill crème in tart. 6.Decorate with varieties of fruits.
