Browned Butter Carrot and Coconut Traybake
This traybake is another great form and easy recipe for a carrot cake which I came accross from a small 'cakes&bakes' recipes book come along with bbcgoodfood magazine !
The recipe ( adapted from here )
170 g unsalted butter 140 g light muscovado sugar 1 tsp vanilla extract 2 large eggs 134 g self-raising flour 40g sweetened coconut 150 g grated carrots 1.5 tsp mixed spice
FOR THE TOPPING
60 g desiccated coconut 15 g light muscovado sugar 15 g butter , melted
Method :
1. Line a traybake or small roasting tin, about 20 x 20cm. Heat oven to 180C/160C fan/gas 4. Mix carrot, coconut, raisins and mixed spice together in a bowl and set aside. Brown the butter in a large saucepan, cool for 5 mins, add the sugar, vanilla and eggs, then beat until smooth with a wooden spoon. Stir in the flour and ¼ tsp salt. Stir the carrot mixture into the batter. Bake for 20-30 mins.
2. Meanwhile, evenly mix all ingredients for the topping. Smooth this over the cake, then bake for 5-10 mins more until golden and a skewer inserted comes out clean. Cool, then cut into squares.
